Who says being celiac has to stop you from enjoying the great pleasure that is a BROWNIE. These Gluten free brownies will make you feel in heaven. The holidays can be difficult for keeping healthy, this recipe will help you keep your head in the game.
Prep Time: 50 minutes. Cooking Time: 20 mins
6 tablespoons unsalted butter, cut into pieces. Plus extra for the pan.
1/3 cup cornstarch (spooned and leveled)
1/4 cup unsweetened cocoa powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
12 ounces semisweet chocolate chips
3/4 cup sugar
1 teaspoon vanilla extract
1 cup chopped toasted pecans

Preheat your oven to 350 degrees.
Take a square baking pan and butter it lightly. Take some parchment paper and cover the pan with it, make sure to leave a small overhang on all sides.
In a bowl, add the cornstarch, cocoa, cinnamon, and salt, mix well.
Separately, in a bowl add the chocolate and butter. Microwave for 2 minutes, in 30 seconds intervals. Stir every 30 seconds or until it’s melted and smooth.
Stir in sugar and vanilla in the melted chocolate. Also, start stirring in the eggs, one at a time, until well combined.
Add in the cornstarch mixture and stir vigorously until it comes out a smooth mixture and it begins to pull away from the side of the bowl, this will take about 2 minutes. After this process is done, stir in pecans.
Pour the batter into the pan and smooth the top.
Place in the oven and bake. Check after 30-35 minutes, insert a toothpick in the center of the brownie, if it comes out with a few moist crumbles around it then you can take it out.
Let it cool completely in the pan. Using the bit of paper overhang, lift the cake out of the pan and cut as desired.
You can change the pecans for walnuts or almonds, chopped.
