Today we are taking a look at two easy and healthy No Eggs Breakfast Recipes. Eggs are one of the most used ingredients when making breakfast at home.
If you want to mix it up and change the egg for something equally tasty, filling and most importantly healthy there are many incredible options to make a great breakfast.
First No Egg Recipe is a super easy and delicious Toast with Avocado and Goat Cheese. It sounds too simple, I know, but I’m adding a couple extra toppings to make more nutritious and tastier.
Personally, I love avocados, can’t have enough. I have to be careful though and remember the old time rule: “Everything in moderation”.
Avocados are a healthy must have, to me. But you have to know how to pick them, which is not easy. Sometimes, I get it wrong and I call myself an expert.
Bread is always a great friend that it’s just waiting to make your life easier. For this recipe, I always use Rye Bread, because I can’t eat wheat products. But if you can, go ahead and use whatever type of bread you like the most.

Prep Time: 5 minutes. Yield: 2 Servings
4 Bread Slices (Your favorite kind)
1 Avocado (Ripped)
1/2 Cup of Crumbled Goat Cheese
Extra Virgin Olive Oil (To your taste)
Sea Salt (To your taste)
Bits of Crispy Bacon
Take your bread slices until they are golden brown. Next, cook your bacon until it gets crispy.
Smash the avocado until you make a bit of a lumpy paste. Then spread it over your warm toasts.
Sprinkle as much goat cheese as you want and do the same with the olive oil, the previously cooked bacon, the fresh basil and the sea salt to your taste.
That’s it. You’re ready to have your quick breakfast and run out the door.
For our second recipe, I wanted to do something even easier but equally healthy. Just because we’re in a hurry and have to get to class or to work, doesn’t mean we have to neglect our health and system functionality.
Don’t be scared by this one, it just has a fancy name 😀
Prep Time: 10 minutes. Yield: 1 Serving
1 cup of Greek Yogurt
½ cup of strawberries
Take a small bowl. Add the yogurt, chop the strawberries and add them on top of the yogurt. Do the same procedure with the banana and the amount of almonds you want to use.
Now, if you are in a hurry to go out and want to take this breakfast to go, I don’t recommend. Only because I don’t like the consistency the bananas in the yogurt after a little while in it. Taste it’s fine, but personally, consistency wise, not my favorite. And don’t be afraid to add any fruit you like.
